Indonesian Chicken Skewer Appetizer With Peanut Dipping Sauce

1 lb boneless chicken breast halves, skinned
2 tbsp honey
2 tbsp reduced fat chunky peanut butter
¼ cup reduced sodium soy sauce
¼ cup sherry cooking wine
¼ cup orange juice

To Marinate Chicken:

1. Cut chicken into ¼” strips. Refrigerate while making sauce.
2. Make marinade/dipping sauce: Microwave honey for 1 minute to soften. Combine rest of ingredients and microwave again for 30 seconds. Whisk until well blended.
3. Let sauce cool. Pour 1/3 cup of marinade over chicken. Save other 2/3 cup for dipping chicken when served.

To Cook and Serve
1. Grill, broil, or stir-fry chicken strips. To broil or grill, thread chicken strips on skewers. To stir fry, heat wok and use cooking spray. Sauté chicken, stirring frequently, until no longer pink inside. Serve stir-fried chicken pieces on toothpicks.
2. Arrange chicken on platter with reserved peanut dipping sauce. Garnish with pimentos, roasted peppers, or cherry tomatoes for the holidays
