Mediterranean Pasta Salad

1 box (16 oz) Gemelli, Penne, or Bow Tie pasta
2 cans (15 oz) rinsed, drained white kidney, or small white beans
½ cup olive oil
½ cup sliced olives
½ cup chopped raw carrot
½ cup shredded red cabbage (optional)
¼ cup chopped red or Vidalia onion
1 cup diced plum, cherry or grape tomatoes
½ cup red wine vinegar
2 cloves garlic, pressed

In a large bowl, stir together last five ingredients to marinate. Meanwhile, cook pasta according to package directions. Rinse with cold water and drain well. Stir oil into marinade: toss in cooled pasta, beans, and remaining ingredients. Cover and refrigerate from 2-24 hours to enhance flavor.
