This is a hearty soup packed with fiber and protein. Use your creativity by substituting vegetables and beans of your choice!
Ingredients
1 tsp chopped garlic
28 oz can crushed tomatoes 3 cups water
1 tsp dried basil
1 tsp dried oregano
1 tsp ground cumin
1 tsp pepper
1 can drained kidney beans (15oz)
1 can drained black eyed peas (15oz)
1 can drained garbanzo beans (15oz)
1 can tomato paste(6oz) if you like a thick soup
Directions
Combine the ingredients. Bring to a boil, then reduce heat, cover and simmer for 10 minutes.
1 cup chopped carrots
1 cup chopped celery
1 medium chopped onion
Stir in vegetables, cover and simmer until vegetables are cooked to your liking. This soup is delicious the second time around. Makes about 3 quarts. One serving = 1 cup
